With regular use, this Hydrometer will enable you to follow the progress of fementation. As the sugar turns into alcohol, the hydrometer will slowly sink. When fermentation is complete, the hydrometer will stop sinking. Neither wine nor beer should be bottled until the Specific Grafity reading is below 1.006 or the bottle may burst. Sterilise all equipment to be used for testing your beer or wine.
The BALLING or BRIX scale expresses the percentage of sugar by weight. The ALCOHOL scale is actually measuring potential alcohol. In order to determine the alcohol content of a wine, you will need to make two readings; one before fermentation and another after fermentation. Subtract the final figure from the first reading and you will have the alcohol content percentage by volume.
